Milk bar mug cake

you will need

A microwave

2 x 11 ounce mugs

Ingredients

40g unsalted butter, melted

35g buttermilk

20g vegetable oil/grapeseed

1g vanilla extract

100g sugar

50g plain flour

20g cocoa powder

2g baking powder

2g salt

45g chocolate chips/crushed flake

1 large egg

Method:

Whisk the melted butter, buttermilk, oil, vanilla extract and egg together in a bowl.

In a separate bowl whisk the sugar, flour, cocoa powder, baking powder and salt.

Pour the wet ingredients into the dry ones and stir to combine. Whisk to break up any lumps, stir in the chocolate chips or chocolate of your choice.

Divide the batter evenly between the 2 mugs and microwave until the cake rises. Start with 1 minute and then add 10-15 seconds after to avoid a microwave explosion.

Once cooked, leave the hot gooey cake to cool slightly and then add more chocolate and serve with vanilla Ice cream.
