Salted peanut butter cookies GF & DAIRY FREE

Ingredients

1 3/4 cups packed light brown sugar

2 large eggs, at room temperature

1/2 teaspoon vanilla extract

1 3/4 cups smooth peanut butter

Coarse-grained sea salt, to finish

Vegan chocolate chips (optional)

Method:

Preheat the oven to 350°F. Line a baking tray with baking paper.

In a medium bowl, vigorously whisk together the light brown sugar and eggs until incorporated. Whisk in the vanilla extract. Add the peanut butter and mix with a spatula until smooth and completely incorporated.

Make sure there are no visible streaks left of peanut butter in your mix

You can bake these cookies as soon as the dough is prepared, but they will retain their shape better if you freeze them for 15 minutes before baking, or you can put in the fridge for 1 hour.

Once hardened, remove the dough. I weighed the dough into 50g portions and rolled into a ball or equally you can use an Ice Cream scoop and scoop the dough onto the baking tray.

Sprinkle the dough balls lightly with sea salt, just before baking. Bake for 20 to 22 minutes, turning the tray once halfway through baking (for smaller cookies, bake for 16 to 18 minutes).

When finished, the cookies will be lightly golden and cracked on top. Let cool completely before serving.

I then added a few milk chocolate chips on some of my cookies just to mix it up. (The choice is yours)

Ovenly bakery has given us the best peanut butter cookies of all time!

As we’re all in this crazy situation and currently still self- isolating. I wanted to give you guys a very quick and easy recipe with minimal ingredients. I have a slight obsession with peanut butter and Ovenly bakery. It is top on my list of places to go when I next visit NYC.

These cookies are one of the easiest to make and they’re gluten and dairy free! Best cookie ever right? I tweaked them slightly by adding some vegan milk chocolate chips on some of mine just to mix it up.
