Caramelised banana cake

Ingredients for caramel bananas

3/4 cup granulated sugar

2 tablespoons water

2 ripe bananas peeled weight 200g 

2 tablespoons of milk 

100g soft butter or baking spread

150g plain flour

150g  caster sugar

1 tsp bicarbonate of soda

1 tsp baking powder

2 free-range egg

100g  dark chocolate chunks 

Method:

Preheat oven to 160 C grease, and line your 9 “ square tray.

First caramelize your bananas, place sugar, and water in a saucepan, and heat slowly until caramel forms. Pour over sliced bananas and allow to cool. 

Use a fork to mash the bananas then add the remaining ingredients into a bowl and mix adding the dark chocolate last.

Pour over sliced caramelized bananas and bake for 60 minutes or until a skewer inserted comes out clean.

Once cooked, allow to cool and slice.
