Almond butter milk choc cookie slice

Ingredients

Makes 1 x 8-inch deep square tin

100g browned butter unsalted and diced

280g plain flour

3/4 tsp bicarb

1 tsp flaked salt

75g almond butter

125g caster sugar

80g light brown sugar

45g dark brown sugar

1 large egg + 1 egg yolk

1/2 tsp vanilla extract

250g milk chocolate chopped

Method:

Heat oven to 170C.

Grease then line 1x 8inch deep square tin.

In a saucepan add the butter and melt on medium heat until browns. Set aside to cool.

Combine all dry ingredients into a bowl and whisk.

Combine the now cooled butter, almond butter, and all sugars and stir.

Whisk the mix for a few minutes or until lightened.

Add egg and vanilla and stir.

Add the flour mixture and gently mix until mostly combined. Add the chocolate chunks and mix again.

Press into your greased baking tin.

Bake for 30 minutes or until golden brown.

Leave to cool.

Cut into squares.
