Peanut butter cups

Ingredients

3 tablespoons of sifted icing sugar

120g of peanut butter

170g melted chocolate (100g milk, 70g dark)

Method:

Line a muffin tray with cupcake cases.

Over a saucepan of hot water, combine both milk and dark chocolate and melt together (you can switch up the ratios of chocolate if you prefer one more than the other).

Once melted leave to the side.

Mix your peanut butter with your sifted icing sugar, this should make a slightly thickened paste.

Now you’re ready to assemble.

Place a tablespoon of melted chocolate in the cupcake case, next add a teaspoon of peanut butter paste, now another tablespoon of chocolate on top to cover the peanut butter mix.

Once all peanut butter cups are made, place in the fridge with a little cracked sea salt and set for 1 hour.

Remove from the fridge, unwrap the cups from the cases and eat.
