Strawberry apple, milk choc and honeycomb cookies

Ingredients

150g unsalted softened butter

80g light brown sugar

80g caster sugar

1/2 tsp bicarb of soda

pinch of salt

1 tsp vanilla extract

1 egg

225g plain flour

100g milk chocolate chips

50g honeycomb chips

50g strawberry flavoured dried apple chunks

200g milk chocolate for melting

Method:

Preheat your oven to 160 degrees.

Place the soft butter and both sugars into a large mixing bowl and beat using an electric beater until creamy

Add egg and vanilla and stir, scraping down the sides.

Add flour, bicarb, and salt and mix until cookie dough forms.

Add all of your milk choc chips, honeycomb, and dried apple chunks and stir.

Roll into 50g balls or use an ice cream scoop to scoop them onto baking paper and bake in the oven for 12 minutes.

Once removed from the oven allow to cool on a wire rack.

Once cookies have cooled, melt 200g of milk chocolate in the microwave. Make sure to melt the chocolate 20 seconds at a time and stir in between.

Dip the cookies halfway into the melted chocolate and place them on a clean piece of baking paper. Add more chunks of honeycomb and apple chunks.

Allow the chocolate to set.

Eat and enjoy.
